The blend of Merlot, Cabernet, and Barbera comes from two vineyards in the Cinto Euganeo area: one hectare on the terraced, calcareous sedimentary slopes of Monte Gemola, and two hectares in a small valley between Monte Cinto and Monte Partizzon. Vines average around 40 years of age.\u003c\/p\u003e\u003cp\u003eIn the vineyard, Davide Boldrin and Francesca Gozzo practice organic and biodynamically inspired farming guided by principles of synergistic and regenerative agriculture. All grapes are hand destemmed and foot pressed. Fermentation is spontaneous with native yeasts in fiberglass and stainless steel vessels. The wine receives approximately four weeks of maceration with regular punch-downs, is racked once or twice, then bottled unfined and unfiltered with no added sulfites. Total sulfites measure 19 mg\/L.\u003c\/p\u003e\u003cp\u003eThe name translates as \"under the skin\" and the wine reflects that idea: the structure and savory character are just beneath a surface of ripe red fruit.
