The parcels are steep hillside and terraced sites farmed under Naturland organic certification since 1989.\u003c\/p\u003e\u003cp\u003eWinemaking is minimal: grapes are destemmed and directly pressed, then fermented spontaneously with native yeast in stainless steel tanks without temperature control. The wine rests on its lees until bottling, is bottled unfined and unfiltered, and receives only a small dose of sulfur at bottling — between 20 and 25 ppm — well below the legal limit for organic wines.\u003c\/p\u003e\u003cp\u003eKraemer Silvaner Trocken 2017 pours a hazy lemon yellow. On the nose it is cool and restrained, with herbal notes, citrus, and yeasty lees character.
