The wine is produced by Emiliano Giorgi and Arcangelo Galuppi, who founded Sete in 2013 to rescue abandoned and semi-abandoned vineyard parcels from local elderly farmers.\u003c\/p\u003e\u003cp\u003eOttonese is the Lazio synonym for Bombino Bianco, an ancient variety known in the region for producing wines that are distinctly citrusy and mineral. Malvasia Puntinata, also called Malvasia del Lazio, is a natural cross of Moscato di Alessandria and Schiava Grossa, and contributes floral aromatics, apricot character, and a sapid, mineral finish. Together the two grapes make a wine that is bright, textured, and low in alcohol.\u003c\/p\u003e\u003cp\u003eThe grapes are wild-yeast fermented with 48 hours of skin contact, then aged for approximately 6 months on the fine lees in fiberglass vats. No sulfites are added at any stage. The wine is bottled unfined and unfiltered.\u003c\/p\u003e\u003cp\u003eSete farms organically, certified by Suolo e Salute (Soil and Health). All vineyard work is done by hand.
