It is a blend of Raboso del Piave (60%) with Cabernet Sauvignon and Cabernet Franc (40%), grown on 1.2 hectares of medium-textured, gravelly soils rich in sand and silt alongside the Piave River. The vineyards are trained in Guyot and Sylvoz and farmed organically and biodynamically, certified by both Suolo e Salute and Demeter. All vineyard and cellar work follows the Maria Thun biodynamic calendar.\u003c\/p\u003e\u003cp\u003eGrapes are destemmed and macerated on the skins for at least 30 days with spontaneous fermentation using only native yeasts. The wine finishes fermentation partly in stainless steel and partly in terracotta amphorae, remaining in full tanks without racking to keep the lees in suspension. It spends winter in a tank outside the cellar, using ambient low temperatures to stabilize tartaric acid naturally before bottling. The wine is bottled unfined and unfiltered with no added sulfites.\u003c\/p\u003e\u003cp\u003eOn the nose it shows pomegranate, red currant, carob, and dark spice. The palate is full and structured with bright acidity and a balance of fruit and savory depth that reflects Raboso's naturally high acidity and the Cabernet varieties' structure.
