The grapes were sourced from vineyards with granite and shallow clay\/loam soils. Whole clusters were sealed and allowed to rest for 10 days, then lightly tread by foot and macerated for several hours before pressing.\u003c\/p\u003e\u003cp\u003eAfter pressing, the fermenting juice was transferred to a poly tank where it completed fermentation using native yeasts over several weeks. The wine was bottled unfined and unfiltered with zero added sulfur dioxide. Production was limited to 130 cases. The only ingredient is grapes.\u003c\/p\u003e\u003cp\u003eDespite its coral-pink color and hazy appearance, the extended skin contact puts this squarely in orange wine territory. At 12% ABV it sits light on its feet. The texture is chewy with ripe red fruit, melon, and a subtle funk on the finish.
