Montemarano sits directly adjacent to the Taurasi DOCG zone and is one of Irpinia's most respected areas for Aglianico cultivation. The vineyards are farmed organically by hand and are planted on volcanic soils composed of ash, pumice, and mineral-rich subsoil.\u003c\/p\u003e\u003cp\u003eThe grapes are hand-harvested and spend just one evening on skins before being pressed directly into tank. Fermentation proceeds spontaneously with ambient yeasts and no temperature control. The wine is then bottled before fermentation is complete, with a pied de cuve of the previous vintage's sweet Aglianico added to trigger secondary fermentation in bottle under crown cap. There is no disgorgement, leaving a light natural haze and fine sediment. No fining, no filtration, and no sulfites added.\u003c\/p\u003e\u003cp\u003eThe result is a dry, gently sparkling rosé with a deeper extraction and more fruit concentration than most frizzante styles. The 2019 shows tart red fruits, blood orange, and a saline, mineral-driven finish from the volcanic terroir.
