It is labeled Terre Siciliane IGP Rosato and comes in at 11.5% ABV, a direct result of early harvesting to preserve acidity and keep alcohol low.\u003c\/p\u003e\u003cp\u003eIn the cellar, 70% of the fruit is directly pressed and 30% undergoes a short 8-hour cool maceration on skins before pressing. Fermentation is spontaneous with indigenous yeasts in stainless steel tanks. The wine ages for 8 months split between stainless steel and concrete, then is bottled with no added sulfur, unfined and unfiltered.\u003c\/p\u003e\u003cp\u003eThe result lands somewhere between a pale rosé and a light red. Expect bright, tart red fruit, a clear note of black cherry, orange zest, brackish wild herbs, and a persistent saline minerality on the finish. Fine tannins give it structure without weight.
