The first two sites have chalky-clay soils; Amoreira da Gândara is predominantly sandy. Grapes are sorted in the vineyard at harvest in mid-August.\u003c\/p\u003e\u003cp\u003eBoth white and red grapes are co-macerated in plastic eggs for five days, then fermented spontaneously in stainless steel using ambient yeasts over three weeks. The wine is bottled before fermentation is complete — the pét-nat method — trapping CO2 in the bottle naturally. It is not fined or filtered.\u003c\/p\u003e\u003cp\u003eThe result is a lightly cloudy, softly sparkling rosé with the bright citrus and floral character of Fernão Pires lifted by the skin-contact color and structure from Baga.
