The Sangiovese component was produced by saignée from Buona Notte's Cento Per Cento, the winery's 100% Sangiovese red wine. The 2019 growing season in the Hood River Valley ran cooler than average, preserving acidity and encouraging the decision to redirect the fruit into rosé.\u003c\/p\u003e\u003cp\u003eWinemaker Graham Markel used three separate lots to build the final blend: grapes pressed immediately off the vine, grapes pressed after four days of skin contact, and the saignée Sangiovese. Blending these fractions allowed him to calibrate acidity and textural weight before the wine was finished in neutral French oak. The result is unfined and unfiltered.\u003c\/p\u003e\u003cp\u003eBuona Notte operates out of Cascade Locks in the Columbia Gorge AVA, sourcing Italian varietals from vineyards on both the Oregon and Washington sides of the Columbia River. Markel trained for seven years under Maggie Harrison at Antica Terra and Master Sommelier Nate Ready at Hiyu Wine Farm before founding Buona Notte in 2016.
