The name is a pun on ripasso and pazzo (Italian for crazy): white grape juice is passed over red grape skins, giving the wine its salmon-pink color and light tannic grip without making it a full red.\u003c\/p\u003e\u003cp\u003eGrapes are hand-harvested from organically and biodynamically farmed vines planted at up to 10,000 plants per hectare, a mix of massale selections and ungrafted old vines. Fermentation is spontaneous with native yeasts in an ancient cellar in the center of Gradoli village. The wine is unfined, unfiltered, and bottled with no added sulfites.\u003c\/p\u003e\u003cp\u003eThe volcanic soils here derive from the dormant Vulsini complex, the same system that formed Lake Bolsena, the largest volcanic crater lake in Europe. The lake moderates temperatures, moderating the growing season and preserving natural acidity in the grapes.
