The 2019 vintage was an excellent growing season in Cahors. The fruit was vinified in tank with a high proportion of whole berries, then aged in barrel inside a natural limestone cave carved into the hillside near Alary. No sulfur was added at any stage, and the wine was bottled unfiltered.\u003c\/p\u003e\u003cp\u003eOn the palate, the wine is light to medium bodied with ultra-fine tannins and lively acidity. The aromatic profile is precise and focused: dark berry fruit, tomato leaf, white pepper, and a mineral undercurrent from the iron-rich soils. The old-vine Côt gives structure without weight, and the freshness holds the wine together in a way that separates it clearly from heavier Malbec styles.\u003c\/p\u003e\u003cp\u003eAll Ostal Levant wines are released as Vin de France rather than under the Cahors AOC label. The domaine uses no oenological inputs of any kind — no added sulfites, no fining agents, no commercial yeasts.
