Andy Young of St. Reginald Parish filled fermentation bins with that pressed pomace plus water, gave the mixture a few days of skin maceration, then drained the liquid to tank and re-pressed the pomace back into it. A small amount of underripe Pinot Gris juice was added to calibrate acidity. The liquid was racked twice, crossflow filtered, and bottled with CO2 added for a clean, gentle fizz.\u003c\/p\u003e\u003cp\u003eThe result clocks in at 4.2% ABV — bone dry, pale ruby-pink, and lightly sparkling. Tart raspberry, watermelon, and a hint of cherry-skin crunch define the palate. It reads somewhere between flavored sparkling water and a very light red, without the weight or alcohol of either.\u003c\/p\u003e\u003cp\u003eYoung sources fruit from organically farmed sites across the northern Willamette Valley. The Marigny label, which Young launched in 2018 as a subset of St. Reginald Parish, focuses on easy-drinking, low-intervention styles made with native yeasts and minimal additions.
