piquette-second-flush-artemis-botanical-natural-piquette
Piquette Second Flush

Piquette is made by rehydrating pressed grape pomace with water, allowing it to ferment for a few more days, then pressing again. The result is a low-alcohol, lightly sparkling beverage with a different character than the primary wine — more lactic and prickly, with a texture closer to a wild sour beer than conventional wine. Artemis Botanical borrows the term "second flush" from tea cultivation to describe piquette made from later-ripening, end-of-season fruit: Cinsault, Grenache, and Flora.

Flora is a California original, bred in 1938 by UC Davis viticulturist Dr. Harold Olmo as a cross of Semillon and Gewurztraminer, and not released commercially until 1958. It produces wines with subtle aromatics, a soft texture, and flavors that lean toward lemon and honey rather than the overt spice of its Gewurztraminer parent. Artemis sources the Flora from Yorkville in Mendocino County. There is very little of it left planted in California.

Just before bottling, a small quantity of Bay Area honey is added to give the remaining yeasts enough sugar to generate a gentle sparkle in bottle. The wine is unfiltered and bottled quickly to preserve its liveliness. No sulfur or other additives are used at any stage. All fruit is organically grown.

//cdn.shopify.com/s/files/1/0019/3363/9735/products/artemis-piquette-natural-wine-primal-wine.jpg?v=1780186334
