Manual punchdowns continued until the wine was dry, then it was pressed directly to neutral barrels and a puncheon, racked once, and aged for six months before bottling on June 4, 2020. Nothing was added and nothing was taken away: no fining, no filtration, no added sulfites. Residual sugar sits at 0.1 g\/L and acidity at 6.1 g\/L.\u003c\/p\u003e\u003cp\u003eThe result is a wine that wears its mountain origin lightly — dusty and savory rather than plush, with 14% ABV supported by a firm acid spine.
