The vineyards sit on clay and limestone soils at the foot of the Larzac plateau, roughly 30km from the Mediterranean coast. Cool northerly winds and significant diurnal temperature variation keep the fruit fresh and the alcohol moderate — this comes in at just 12%.\u003c\/p\u003e\u003cp\u003eIn the cellar, the grapes are fermented spontaneously with indigenous yeasts, macerated with the skins, and aged in old oak barrels. The wine is bottled unfined and unfiltered with no added sulfites. That restraint shows: this is a Languedoc red that drinks nothing like the region's reputation for warm, alcoholic, extracted wines.\u003c\/p\u003e\u003cp\u003eCinsault rarely gets the solo spotlight in the south of France, where it is almost always blended with Grenache, Syrah, or Carignan. Here it is given the full stage: light-bodied and crunchy, with lifted red fruit, a violet note on the nose, and a faint peppery finish. It has the transparency and food-friendliness of a good Gamay, but with a distinctly Mediterranean herbal undercurrent.\u003c\/p\u003e\u003cp\u003eJulie Brosselin and Ivo Ferreira formed Les Cigales dans la Fourmilière in 2016, pooling vineyards that now total 10 hectares farmed organically. Julie previously co-owned Le Petit Domaine; Ivo, a Portuguese-born vigneron, worked alongside Jean-Marc Brignot in the Jura and the Amoreau family at Château Le Puy before establishing his own label, Domaine de l'Escarpolette, in 2009.
