Soils are of Pliocene and Pleistocene origin, composed of clay, sand, and silt. The altitude brings significant diurnal temperature shifts that slow sugar accumulation overnight and retain natural acidity. Syrah thrives here and now accounts for the majority of the Cortona DOC's plantings.\u003c\/p\u003e\u003cp\u003eAll Do.t.e wines are bottled under the Vino table wine designation rather than Cortona DOC, which Filippo describes as the only classification truly favorable to the creative process.
