Punched down by hand twice daily. After pressing, the wine was aged “sous voile” in partially filled neutral French oak barrels for 10 months without ever being topped, to encourage the development of a veil of surface yeast. This technique contributes spice and nuttiness and helps soften the tannic nature of skin-fermented Ribolla.
