The wine spends roughly 30 days on skins with 50% partial stems included, all in stainless steel tanks. A short finishing period in old oak barrels follows, and a minimal dose of sulfites is added at bottling. The result is a vibrant amber-hued wine.\u003c\/p\u003e\u003cp\u003eOn the nose: lime blossom, chamomile, quince, and spiced orange rind. The palate is light-bodied and dry, with juicy tangerine and peach fruit, bright citrus acidity, and a soft mineral finish. Tannins from the skin contact are gentle and give the wine structure without weight.\u003c\/p\u003e\u003cp\u003eBadiki is one of the oldest surviving grape varieties in the Tyrnavos region and was among the few local white varieties that persisted after phylloxera devastated the area's vineyards in the early 20th century.
