It is then conditioned with fresh Gewurztraminer juice to trigger refermentation in the bottle, resulting in a sparkling, lively wine at 7% ABV.\u003c\/p\u003e\u003cp\u003eThe wine is bottled unfined and unfiltered with zero added sulfur dioxide, a zero-zero production by any measure. Gewurztraminer's highly aromatic pink-skinned grape contributes its characteristic lychee, rose petal, and ginger profile even at this second-pressing stage, while the organic lemon juice addition keeps the wine bright and structured despite its low alcohol. The result is dry, gently fizzy, and more alive on the palate than its modest ABV suggests.\u003c\/p\u003e\u003cp\u003ePiquette has roots going back to 18th-century France, where it was traditionally consumed by vineyard laborers as a low-cost, low-alcohol shift drink. The natural wine world has revived the format as a way to extract a second product from the grape pomace without waste.
