The Lagrein is whole-cluster direct pressed; the Schiava is macerated on skins for approximately 36 hours before pressing. The two juices are blended and undergo spontaneous fermentation together in stainless steel tanks.\u003c\/p\u003e\u003cp\u003eThe wine is bottled at the end of primary fermentation with around 14 g\/l of residual sugar, completing its carbonation in bottle via the ancestral method (metodo ancestrale). It is not disgorged, not fined, not filtered, and receives only minimal added sulfur. The result is a lively, naturally cloudy frizzante with fine bubbles.\u003c\/p\u003e\u003cp\u003ePranzegg's vineyards range from 280 to 900 meters elevation across several steep sites around the Bolzano valley basin. Soils shift with altitude: volcanic rock at the highest points, then sand and clayey sand, and moraine deposits lower down. The vines are predominantly old, trained on the traditional South Tyrolean pergola system, and farmed biodynamically by hand since 2009.\u003c\/p\u003e\u003cp\u003eAromas run toward pomegranate, wild cherry, and raspberry with floral notes of hibiscus and lilac.
