Grapes are farmed organically using only copper and sulfur treatments in the vineyard.\u003c\/p\u003e\u003cp\u003eVinification splits the harvest: one-third of the mass macerates on skins through the end of fermentation, while the remaining two-thirds has only brief skin contact of a few hours. The two portions are then combined into a single cuvée. Fermentation is spontaneous with indigenous yeasts, with no temperature control, no fining, and no filtration. The wine is bottled before fermentation completes, capturing its bubbles in the ancestral method. Zero sulfur is added at any stage.\u003c\/p\u003e\u003cp\u003eThe result is a lightly sparkling, hazy white with a fine, persistent perlage. Expect aromatic notes of stone fruit, pineapple, and fresh herbs alongside a textural lift from lees contact. The palate is dry, fresh, and low in alcohol, keeping well under 12% ABV.
