At 11.5% ABV, it sits on the lighter end of the spectrum for the variety.\u003c\/p\u003e\u003cp\u003eAll four grape varieties were fermented separately using only native yeasts. The wine was then aged in neutral French oak barrels with no SO2 added during fermentation or aging. Malolactic fermentation occurred naturally. The wine is bottled unfiltered and unfined, and may contain light sediment.\u003c\/p\u003e\u003cp\u003eGrapes were harvested in August to preserve natural acidity — an intentional choice by winemaker Chris Brockway to keep the wine fresh and low in alcohol.
