The wine is produced under the Les Vins Pirouettes collective, founded by Christian Binner of Ammerschwihr.\u003c\/p\u003e\u003cp\u003eEach variety is vinified separately. Grapes are hand-harvested with a triage in the vines, destemmed, and fermented with indigenous yeast and zero added sulfur. The varieties spend approximately 18 days macerating on their skins, which gives the wine its orange-pink color. Elevage follows on the fine lees for 11 months in traditional large Alsatian foudre. The wine is blended one day before bottling, then bottled unfined and unfiltered with no sulfur addition.\u003c\/p\u003e\u003cp\u003eThe result is a savory, textured orange wine with electric acidity, notes of brandied stone fruit, sea salt, and wildflowers. It sits in the Alsace AOC appellation and reflects the clay-limestone soils around Rosheim.
