Winemaking is overseen by Giulio Armani of La Stoppa and Denavolo, who serves as enological consultant to Paolo Foppiani.\u003c\/p\u003e\u003cp\u003eThe wine is made via the ancestral method: Barbera undergoes a short skin maceration, then rests for approximately six months in stainless steel. In spring, the wine is refermented in bottle using its own grape must. The result is a lightly sparkling rosato with fine, creamy bubbles and no disgorgement. It is unfiltered and bottled with zero added sulfites.\u003c\/p\u003e\u003cp\u003eIn the glass it pours a pale salmon-pink with a slight haze from the lees. The nose is fresh and direct: red cherries, wild strawberry, and a faint earthy note underneath.
