The estate has been certified organic since 2015.\u003c\/p\u003e\u003cp\u003eThe wine is made using the ancestral method: grapes are pressed whole, the must macerates on the skins for 48 hours, then ferments spontaneously with native yeasts. The wine is bottled before fermentation finishes, completing its second fermentation in bottle, where it ages for 6 to 8 months. It is never filtered or clarified. ABV is 11%.\u003c\/p\u003e\u003cp\u003eIn the glass it is pale straw yellow with a gentle, persistent mousse. The nose offers peach, ginger, and citrus, with a subtle floral note and a yeasty, bread-like undercurrent from the secondary fermentation. On the palate it is dry and light-bodied, with citrusy grapefruit acidity, a pinch of salinity, and a clean mineral finish.
