The grapes were macerated on skins for approximately 30 days before pressing, resulting in a wine with light tannin structure, vivid aromatics, and no added sulfites.\u003c\/p\u003e\u003cp\u003eThe wine is bottled unfined and unfiltered. Despite the extended skin contact, the texture stays fresh rather than grippy — the tannins are soft, and Muscat à Petits Grains provides the dominant aromatic drive: white flowers, stone fruit, and spice. Naturally fermented wines made from Muscat with sotolon character (from spontaneous fermentation) can express notes of fenugreek and dried honey alongside the variety's signature floral lift.\u003c\/p\u003e\u003cp\u003eVineyards sit on the stony, clay-limestone foothills at the foot of the Larzac plateau, between 120 and 350 metres elevation. Strong diurnal temperature swings off the Causse plateau preserve acidity and slow ripening, keeping the wine lively despite Languedoc's warm Mediterranean summers.
