Anders Frederik Steen vinifies this wine on site in Alsace, in a cellar set aside specifically for him by the Bannwarths, arguing that the cellar itself is part of the local terroir and cannot be separated from the rest.\u003c\/p\u003e\u003cp\u003eThe grapes are hand-harvested and directly pressed. The juice oxidizes in open cuves for 24 to 30 hours before going into old barriques, where it ferments slowly with native yeasts. The wine then spends several years aging under flor, a technique that suppresses Gewurztraminer's typical exuberant aromatics and builds complexity through slow oxidation. No fining, filtration, or sulfur is added at any stage.\u003c\/p\u003e\u003cp\u003eThe result reads nothing like a conventional Alsatian Gewurztraminer. The flor aging strips away the obvious rose and lychee top notes and replaces them with something more saline, nutty, and textured, closer in spirit to an aged Jura white than anything from Alsace.
