Vines range from 12 to 33 years old and are grown on limestone and keuper soils at 300–400 meters elevation. The wine is made primarily by saignée from Andi Knauss's Trollinger red.\u003c\/p\u003e\u003cp\u003eFermentation is carried out with native yeast in stainless steel, where the wine also ages before bottling with a minimal sulfur addition. The result is bone-dry, with no oak influence, preserving the grape's natural acidity and light-bodied structure. Trollinger, known as Schiava in northern Italy, produces wines with notably high acidity for a red grape — here averaging 7 to 10 g\/litre — which makes it an especially lively rosé base.\u003c\/p\u003e\u003cp\u003eAndi Knauss took over Weingut Knauss in 2004 after training in Austria, where he learned organic viticulture. The estate covers 14 hectares across more than 100 plots in Strümpfelbach and surrounding villages in the Württemberg-Remstal appellation. Natural fermentations and minimal sulfur are standard across the range.\u003c\/p\u003e\u003cp\u003eLa Boutanche is a label created by importer Selection Massale for everyday-drinking natural wines at approachable prices. Andi Knauss produces the rosé version, bottled in a one-liter format under a screw cap.
