Knauss, identified on the label by a grasshopper, is the German anchor of the project. The wine is fully dry (trocken) and linear, built around a mineral core with cool citrus fruit and a firm snap of acidity in the finish — closer in spirit to a lean Chablis than to sweeter German Riesling styles.\u003c\/p\u003e\u003cp\u003eWeingut Knauss holds organic certification and farms across more than 100 individual plots in and around Strümpfelbach and neighboring villages in the hills above the river Rems. Elevations range between 300 and 400 meters.
