Aurélie and Vincent Garreta source from vines in Gordes, Vaucluse, situated between the Luberon and Ventoux massifs at around 150 meters elevation on alluvial and mixed soils. Because Cabernet Sauvignon is not permitted in Ventoux AOC red blends, this wine is classified as Vin de France.\u003c\/p\u003e\u003cp\u003eCarbonic maceration ferments the grape juice intracellularly inside whole, uncrushed clusters in a carbon dioxide-rich environment. Applied to Cabernet Sauvignon, this draws out the variety's red cherry fruit and green-peppery character while substantially softening the tannins. The result is a Cab with surprising lightness, juiciness, and drinkability. After maceration, the wine rests for two to three months in stainless steel or resin tanks with no fining or filtering.\u003c\/p\u003e\u003cp\u003eFermentation is carried out entirely by indigenous yeasts naturally present on the grapes. Sulfur additions are minimal, with up to 15 mg\/L added only at bottling. The Garretas began farming in 2014 with organically farmed old-vine parcels in Gordes, and all their vineyards are certified organic.
