Fermentation is spontaneous with indigenous yeasts in stainless steel, with 7 days of maceration on the skins. Malolactic fermentation is carried out, and the wine then ages for 7 to 8 months in steel tanks on the fine lees before bottling in May. Total sulfites are kept to 25 mg\/L.\u003c\/p\u003e\u003cp\u003eThe result is a deep amber-orange wine with real texture and density. The nose shows candied apricot, orange zest, spice, and a saline undertone. The palate is structured with lightly rustic tannins from the seeds, balanced by a clean, food-friendly acidity and a long finish.
