The vineyard sits at around 585 meters above sea level above the Val di Chiana, where clay, sand, and silt soils of Pliocene and Pleistocene origin and significant diurnal temperature swings shape the fruit.\u003c\/p\u003e\u003cp\u003eFilippo Calabresi farms without any chemical substances in the vineyard or cellar. Fermentation is spontaneous, carried out in a combination of cement vats, terracotta, and neutral barrels with no oenological additions, including no added sulfites. The name Do.t.e stands for \"down to earth\" and the approach is exactly that: minimal intervention from vine to bottle.\u003c\/p\u003e\u003cp\u003eThe wine opens with dark bramble fruit, cherry, and a distinct almond note on the nose. On the palate it is juicy and medium-bodied with very soft tannins and enough depth to reward attention. Black pepper and subtle earth complete the profile.
