The blend is 50% Riesling, 25% Pinot Blanc, and 25% Pinot Gris, all hand-harvested in a single day and transported to the Loire Valley in a refrigerated truck for vinification.\u003c\/p\u003e\u003cp\u003eThe wine is made in the ancestral pétillant naturel method: co-fermented, bottled during active alcoholic fermentation with approximately 16 grams of residual sugar, and left undisgorged. Fermentation continues in the bottle and finishes dry within a couple of months. No additions during vinification; a minimal dose of sulfur may be added at bottling if the wine requires stabilization for shipping.\u003c\/p\u003e\u003cp\u003eThe 2018 vintage was vinified in a troglodyte cave in Noizay in the Touraine, which Lisanne used as her base before relocating to Jujurieux in the Bugey. Domaine Luc Faller has farmed biodynamically since around 2010 and holds Demeter certification across 8.5 hectares. The wine is labeled Vin de France, as the pétillant naturel method and cross-regional blend falls outside Alsace AOC rules.
