The vines are 10 to 20 years old, trained in the traditional alberello (bush vine) system on clay and limestone soils roughly 6 km from the coast. Grapes are hand-harvested into crates and farmed organically without pesticides, herbicides, or chemical fertilizers.\u003c\/p\u003e\u003cp\u003eIn the cellar, grapes are destemmed and fermented spontaneously with indigenous yeasts in stainless steel tanks, with 5 days of skin maceration. Pressing is done with a vertical basket press. The wine rests on the lees for 6 months before bottling without fining or filtration. Sulfites are minimal at bottling.\u003c\/p\u003e\u003cp\u003eThe result is a bright ruby red wine with fresh, expressive aromatics: raspberry, black pepper, Mediterranean herbs, and a saline, citrusy edge on the palate. It drinks with more energy and lift than most warm-climate Nero d'Avola, reflecting the sea influence at this western extreme of the island.\u003c\/p\u003e\u003cp\u003eGhammi is classified as Terre Siciliane IGT. Viteadovest is a joint project of the Portelli-Puleo and Angileri families, with winemaker Vincenzo Angileri overseeing production.
