Matija Žerjav — known as Matic — farms nine hectares of dry-farmed, organically and biodynamically managed family vineyards in soils of sandy clay over marl. The grapes are hand-harvested.\u003c\/p\u003e\u003cp\u003eAfter harvest, the grapes go directly into clay amphora, where they ferment on wild yeasts and remain on their skins for roughly 214 days. After pressing, the wine is racked back into amphora for settling. It goes from vessel to bottle without fining or filtration. The result in the glass is a deep lemon-to-orange hue with noticeable cloudiness from the unfiltered solids.\u003c\/p\u003e\u003cp\u003eThe nose leads with green apple, orange zest, orange blossom, and honeysuckle, with dried floral notes emerging with air. On the palate it is bone dry with a firm streak of acidity and soft tannins from the extended skin contact. Expect citrus peel, sweet flowers, and green apple with a mineral, slightly saline finish characteristic of the marl-heavy soils.\u003c\/p\u003e\u003cp\u003eMatic works from a cellar dating to 1852. He uses only native yeasts, adds minimal sulfur only when he judges it necessary, and bottles every wine by hand.
