Carbonic maceration at this length extracts vivid red fruit aromatics while keeping tannins soft, and the barrel aging adds structure without imposing wood flavor.\u003c\/p\u003e\u003cp\u003eCyrille farms just under 5 hectares organically and, as of the time this wine was produced, had moved into biodynamic practices as well. No certified organic or biodynamic label is used, but no synthetic treatments are applied at any point in the farming or cellar process.
