The block sits on a steep, east-facing slope at around 200 metres elevation, with deep sandy soils over clay. The grapes for the pet nat come from the lower portion of the slope, where greater moisture in the soil produces fatter, juicier fruit. The vineyard is farmed organically and overseen by viticulturalist Fiona Wood.\u003c\/p\u003e\u003cp\u003eWinemaking follows the methode ancestrale: grapes are pressed, fermented in tank, then bottled at approximately 6 grams per litre of residual sugar. The remaining sugar ferments out in bottle, creating a fine, persistent mousse and a bone-dry finish. No sulfur is added at any stage, in keeping with Jauma's zero-addition approach across all wines.\u003c\/p\u003e\u003cp\u003eThe result is a light-bodied sparkling white with lively, cleansing acidity and a flavor profile centered on crisp apple, pear, and a thread of stony minerality. It is undisgorged and sealed under crown cap, so a small amount of yeast sediment is normal.
