Grapes undergo skin fermentation for approximately 10 days, then are pressed and bottled while still fermenting, with no additives. Fermentation finishes naturally in the bottle, building gentle effervescence. The wine is unfined and unfiltered, with only 20 mg\/L of added sulfites.\u003c\/p\u003e\u003cp\u003eThe result lands somewhere between a white and a skin-contact wine. Expect ripe yellow fruit, spicy orange zest, a grippy tannic texture from the skin contact, a yeasty dimension, and fine integrated bubbles. Acidity is bright and cutting. The estate, run by the Michlits family, farms approximately 80 hectares of vineyards within a 2,500-hectare mixed agricultural operation. Vineyards are fertilized with compost produced on-farm from sheep, cow, and horse manure.
