They harvested before smoke could penetrate the skins, and the result became an early lesson in listening to what the fruit was doing rather than what the plan called for.\u003c\/p\u003e\u003cp\u003eAll Fiky Fiky wines are wild-fermented using only the native yeasts already present on the grapes. Sulfur dioxide is added only in trace amounts, and only when deemed absolutely necessary. The wine is unfiltered. The Semillon majority drives the blend toward waxy texture and citrus weight, while the Sauvignon Blanc contributes green herb and brighter acid notes.\u003c\/p\u003e\u003cp\u003eThe name Fiky Fiky comes from an Italian disco song by Gianni Drudi (1988).
