The 2019 is composed of Grenache, Cinsault, and Clairette, a mix of red and white grapes that shifts from vintage to vintage. Grapes undergo semi-carbonic maceration with spontaneous fermentation, then age in cement tanks. There is no fining, no filtration, and sulfur additions are minimal at bottling.\u003c\/p\u003e\u003cp\u003eThe result is a light, fluid red with carbonic lift, fresh strawberry and dusty cherry aromatics, a faint floral note from the Clairette, and enough structure from the Cinsault to give it shape without weight. At 13.5% ABV it sits at the fuller end for this style, but the maceration keeps it bright and easy to drink.\u003c\/p\u003e\u003cp\u003eVincent Garreta came to winemaking from environmental and agronomic research. He and Aurélie started farming in 2014 with 3.5 hectares of rented organically farmed vines. Their approach prioritizes soil health through cover crops, no irrigation, and zero synthetic inputs.
