The 2020 vintage was shaped by nearby wildfires: Mayeaux made only rosé from this vineyard that year, picking across three separate dates in a mixture of fog and smoke, with the juice rested post-press to settle out as much ash as possible before fermentation.\u003c\/p\u003e\u003cp\u003eThe grapes were pressed directly with no maceration and the juice was fermented and aged in neutral French oak puncheons. Only 75 cases were produced. The wine was bottled without fining, filtering, or added sulfites, consistent with Mayeaux's zero-zero approach across all Stagiaire releases.\u003c\/p\u003e\u003cp\u003eThe result sits closer to serious white wine in structure than to a conventional rosé. High natural acidity from the cool, high-elevation site and a longer barrel-aging period give it the kind of crystalline tension you find in a well-made blanc de noirs.
