Several of these grapes are on the verge of extinction and were planted in 2012 and 2014 specifically to preserve and re-examine old Languedoc diversity.\u003c\/p\u003e\u003cp\u003eThe wine is made with zero additions: spontaneous fermentation with native yeasts, no fining, no filtration, no added sulfites, and bottled by gravity. The 2019 vintage produced a fuller, more structured wine than the 2018, with inky purple color, dark fruit concentration, silky tannins, and a backbone of vibrant acidity. Notes of blackberry, undergrowth, dried herbs, and licorice emerge with time in the glass.\u003c\/p\u003e\u003cp\u003eMas Coutelou's vineyards sit on clay-limestone soils in the village of Puimisson, just north of Béziers in the Hérault. Because the blend includes varieties outside standard Languedoc AOC regulations, the wine is labeled Vin de France.
