The 2019 vintage is a blend of Mourvèdre and Carignan sourced from organically farmed vines — the Carignan from 60-year-old plantings on pure schist, the Mourvèdre from 25-year-old vines on clay-limestone soils at 35–100m elevation. Both parcels are farmed organically with no synthetic inputs.\u003c\/p\u003e\u003cp\u003eThe 2019 vintage was the last for FX at Domaine Matassa, and one of the most difficult for growers in the eastern Roussillon. In late June, temperatures reached 48°C (118°F), causing sunburn damage that wiped out over 50% of the potential crop. What FX produced from the surviving fruit shows concentration and tension that reflect the adversity of the year. Vinification followed the domaine's minimal-intervention approach: spontaneous fermentation with indigenous yeasts, aging on fine lees, low sulfur at bottling, bottled unfined and unfiltered.\u003c\/p\u003e\u003cp\u003eThe wine is labeled as Vin de France, a classification FX uses across his range to maintain flexibility in blending and winemaking.
