Because the Chiesa Monti vineyard was never registered as a Chianti Classico site, the wine is classified as Toscana IGT.\u003c\/p\u003e\u003cp\u003eThe blend draws on the five indigenous Tuscan varieties planted at Le Boncie: Sangiovese, Canaiolo, Colorino, Mammolo, and Fogliatonda. Fermentation takes place in stainless steel, after which the wine is transferred to wood vats ranging from 5 to 30 hectoliters for one year of aging. Giovanna Morganti farms all her vineyards according to biodynamic principles, with hand harvesting and spontaneous fermentation using indigenous yeasts.
