Longarico farms organically on the slopes near the Bosco d'Alcamo Nature Reserve, overlooking the valley of the River Freddo.\u003c\/p\u003e\u003cp\u003eAfter hand harvesting, the grapes are destemmed and pressed into stainless steel tanks where they ferment with indigenous yeasts and macerate on the skins for 3 days. The wine then ages on the fine lees in chestnut tonneaux for 6 to 7 months, with no temperature control during fermentation. It is bottled unfiltered and unfined with around 10 mg\/L of total sulfites.\u003c\/p\u003e\u003cp\u003eCatartico is released only after at least 24 months in bottle. The result is a structured, amber-hued wine with a resinous texture and a long mineral finish. Chestnut wood lends a gentle savory depth without dominating the fruit. The appellation is Terre Siciliane IGT.\u003c\/p\u003e\u003cp\u003eThe wine is vegan-friendly.
