The wine was then bottled unfined and unfiltered with zero additions — no sulfites, no fining agents, nothing. The resulting wine sits at 12.7% ABV and is classified zero-zero.\u003c\/p\u003e\u003cp\u003eThe Coufos Vineyard sits in Nevada County, on the northern end of the Sierra Foothills AVA. Vineyards here are planted at elevations generally between 1,500 and 3,000 feet, with warm summer days, cool nights, and soils ranging from decomposed granite to rocky loam. The region has a long history with Rhone varieties, and the vineyard is known for producing Rhone-style wines.\u003c\/p\u003e\u003cp\u003eCarbonic maceration on a white Rhone grape like Roussanne is unconventional — it preserves primary fruit aromatics while softening the wine's structure. The Grenache Noir brings red berry fruit and body, while the Roussanne adds weight, texture, and floral lift.
