The wine is bottled without filtration and with zero added sulfites at any stage — making it a true zero-SO2 wine. Temperature during aging is regulated naturally in a cave dug into the ground beneath the winery.\u003c\/p\u003e\u003cp\u003eAt altitude on the Sierra Nevada's north face, diurnal temperature swings are extreme — summer highs reaching 39-40°C and winter lows dropping to -20°C.
