The blend changes each vintage and is assembled from a barrel selection.\u003c\/p\u003e\u003cp\u003eFermentation is spontaneous with native yeasts and all grape varieties are fermented with stems included, except for the Cabernet Sauvignon. After fermentation, the wines age separately in used French oak barrels of 228 and 500 liter sizes for approximately 9 months before blending and bottling. A small dose of SO2 at bottling is the only addition made to this wine.\u003c\/p\u003e\u003cp\u003eThe goal with Bring It is a fuller-bodied red with enough fresh acidity to work across a range of foods and situations. The result is a medium-bodied, tart, and dry red that reflects Joe's preference for wines with acid and freshness rather than extraction and weight.
