The vines range from 10 to 60 years old and grow on the dark slate and schist soils of Anjou Noir, a subzone known for its heat-retaining metamorphic bedrock. The wine is classified as Vin de France and is farmed organically.\u003c\/p\u003e\u003cp\u003eFermentation is spontaneous with native yeasts. The wine is unfined, unfiltered, and bottled without added sulfites, in keeping with how François Maudet and his partner Romain Jos approach all their cuvées. Vinification is low-intervention, favoring infusion over extraction to let the minerality of the slate soils come through.\u003c\/p\u003e\u003cp\u003eMelon de Bourgogne from this part of the Loire tends to produce lean, dry whites with firm acidity, citrus fruit, and a saline mineral edge.
