No sulfur dioxide is added at any stage. The wine is disgorged, then bottled unfined and unfiltered. A light skin contact period gives the wine a faint amber tint and a touch of textural grip alongside the bubble.\u003c\/p\u003e\u003cp\u003eAt 10.5% ABV, Bianco Gas is genuinely low-alcohol. The perlage is soft and frothy rather than aggressive, characteristic of the ancestral method. On the nose, expect bread dough and floral notes with a slight reductive edge that blows off quickly. The palate is tart stone fruit and a hint of nuttiness, with the zippy, high-acid spine typical of Trebbiano d'Abruzzo.\u003c\/p\u003e\u003cp\u003eCantina Indigeno was founded in 2016 by four friends — Alfredo Giugno, Nicola Reginaldi, Fabio Petrella, and Loreto Lamolinara — who came out of the craft beer world before turning to wine.
